ALPHA AMYLASE ENZYME
     
  FOR USE WHEN CONVERTING CEREAL GRAINS SUCH AS  
  WHEAT, CORN, RICE, OR RYE.  
     
  Primarily used for distiller's wash. 4 grams will convert 2-3 pounds of cereal grains starch such as corn, rye, and wheat. Works for all starchs including rice and patatoes. Can be used in designing gluten free beers. Works well when step mashing for a really dry beer. Can also aid in conversion for terrific Saison and Farm House Ales.  
     
  Recommended Usage:  
  For creating a wash, use 8.75 lbs of cereal with 4 gallons of water. Heat and keep at 129ºF - 131ºF for 8 - 10 hours. For step mashing, add enzyme after protein rest of 122ºF for 10 minutes and slowly rise temperature to next step. Works best at temperatures of 124ºF - 132ºF
