  Instructions:  
  Smack the Activator according to instructions on back of the yeast package. Put Grains in grain bag or muslin bags. Put 2 gallons of R/O water along with gypsum in brew pot and heat to 160 degrees. Turn off heat and add grain bag. (Do not add grains to water above 165 degrees.) Let steep for 30 minutes. Remove bag, let drain, and discard grains. Do Not Squeeze grain Bag! Add syrup and bring to boil for 15 minutes. Add Chinook hops and boil for 45 minutes. Add Cascade hops and Irish moss and boil for 15 minutes. Remove from heat. Place 3 gallons of cold water to fermenter, then while straining hops, add wort to fermenter. Cool until below 80*F, then pitch yeast. Ferment at 66-74*F for 10 - 14 days. You can also go from primary to secondary after 6 days and leave in secondary 6 days or until FG is 1.012 - 1.014. Rack into bottling bucket. Heat and boil 1 pt water and dextrose for 5 minutes, then add to bottling bucket. Swirl gently but thoroughly. Bottle and cap bottles. Store bottles for 7-10 days, then chill bottles as needed and enjoy.
