| Smack the Activator according to instructions on back of the yeast package. Put Grains in grain bag or muslin bag. Put 1.5 gallons of R/O water along with gypsum in brew pot and heat to 160*F. Turn off heat and add grain bag. Never add grains to water over 165*F. Let temperature rest down to 154*F stirring grain bag gently from time to time. Leave pot uncovered during this time. Hold at 154 - 156*F. for 20 Minutes. Heat back up to 160*F. and turn off heat. Remove grain bag and let drain. Do Not Squeeze grain Bag! Rinse grains by slowly pouring 1 cup of HOT tap water over top of grain bag. Discard grains. Add 1.5 gallons of water, or 4 gallons if you are doing a 5 gallon boil. Add Malt extract and bring to boil. Make note of the time in which your boil starts, add the 1 oz of Simco Hops. Make sure your boil is a calm boil. Do not boil too hard. After 10 minutes of boil, add 1/2 oz. of Chinook Hops. After 40 minutes of boil, add 1/2 oz. of Centenial Hops. After 55 minutes of boil, the last 5 minutes, add 1 oz. of Cascade Hops along with the Irish Moss. Boil for a final 5 minutes. Cool wort to 80*F. or colder. top off to 5 gallons and pitch yeast. Ferment 7-10 days at 68 - 72*F. You can also go from primary to secondary after 4 days and leave in secondary 7 days or until FG is 1.012 - 1.014. | ||
