| Smack the Activator according to instructions on back of the yeast package. Put grains in grain bag or muslin bag. Put 2 gallons of filtered water along with Brew Saltz in brew pot and heat to 160*F. (Do not add grains to water above 165*F.) Add grain bag and let temperature rest down to 154*F. Now add Amylase Ensyme and hold at 154*F. for 20 minutes stirring grain bag gently from time to time. Leave pot uncovered during this time. Gently heat back up to 165*F. then remove grain bag and let drain. Do not squeeze grain bag! Rinse grains by slowly pouring 2 cups of hot tap water over the grain bag. Discard grains. Add malt extract, and while stirring as to not scorch, and bring to a calm boil. Make note as to when the boil started and add the first half oz. of Phoenix hops, the bittering hops. Boil 50 minutes and add last half oz. of Phoenix hops, the aroma hops. Boil for another 10 minutes along with the Irish Moss. Pour wort into fermenter on top of 3.5 gallons of very cold filtered water, and ptich yeast. Ferment 7-10 days at 68-72*F. You can also go from primary to secondary after 5 days and leave in secondary for 7 days or until F.G. 1.010 - 1.012. Feel free to call if you have any questions. written by Brewers Connection |
