  Instructions:  
  Smack the Activator according to instructions on back of the yeast package. Heat 2 gallons R.O. water along with gypsum to 160 *F. Turn heat off and add Grain bag to your brew pot. Let this rest down to a temperature of 122 *F, stirring grain bag gently from time to time. Leave pot uncovered during this time. After reaching 122 *F, turn on heat and slowly heat back to 156 *F. Remove from heat, remove grain bag from pot and let drain. Do Not Squeeze grain Bag! Rinse grains by slowly pouring 1 cup of HOT tap water over top of grain bag. Discard grain bag, and add 1.5 gallon of water to your brew pot (3.5 to a 5 gallon wort boil). Add malt extracts, now turn heat back on and, while stirring as to not scorch, bring to boil. Note the time your boil starts, then add your first oz. of Saaz Hops. Do not boil to hard. After 45 minutes add the 2nd. oz. of Saaz Hops along with the Irish Moss, Boil for a final 15 minutes. Cool wort to 80 degrees and pitch your yeast. Ferment at 66 *F to 72 *F for 10-14 days. You can also go from primary to secondary after 5 days and leave in secondary 7 days or until FG is 1.010 - 1.008.
